    Our 4th of July in the City

    We started our 4th of July celebrations  early over the weekend by spending some time at the lake. Tony had four days off from work and the first two days we were too tired to go out and party. I took advantage of that and made some delicious Brazilian snacks and I am considering myself now a master chef on Empadas and Esfihas.

    Monday was an amazing day, we were too late to go to the lake and decided to take Marie to the carnival where I was able to fulfill a childhood dream along with my daughter. Hard to believe I had never ridden on a carousel before but, it’s true and it was everything I thought it would be. Of course, it was a little hard to hold Marie up on the horse but, we did good.

    Pocatello – Old Town Pocatello

    I wish I had posted this before but after our trip to Idaho many things happened and I completely forgot to write about it. How could I forget to post about one of the most amazing things I’ve seen in my whole life? Maybe my memory is getting worse?

    The first 2 days of our vacation we stayed in Pocatello, a small city that reminds you of a big metropolis full of those famous store chains. I did not explore it much as I wanted to.     When Marie was 4 months old we went on a road trip to Montana. Marie slept most of the time and the only inconvenience I had was the huge swollen cut on my abdomen, as I had recently undergone a surgery just a month prior, removing a fibroid tumor. Our recent trip to Idaho wasn’t bad either, however she was awake during the whole three hours .     How to Make keto Cream Cheese Crepes

    Easy to make, fast and delicious, the cream cheese crepes are for sure my favorite dish of the Keto Diet. My husband and I, tried the low carb diet for a little but, after some time, we completely lost track. As any other diet, the Keto diet is not easy or pleasurable to do. You have to be strong enough to give up on bread, cookies and noodles if you are going for the Keto, which is by the way, the hardest of the three low carb diets options.

    We decided to stick with the version of 20 g/day of carbs. Can you imagine that? It was torture, since most that you are only allowed to eat are eggs or egg based products. Maybe I just really don’t like eggs, but after two weeks we were like ” No more salad and eggs please”. The good thing is that you can eat as much sausage as you want. However, it is not easy.

    I love fruits of every type (with the exception of grapefruit). I grew up in a country full of a variety of fruits, where you won’t see here in the states. So, yes I suffered much when I found out that  my options of fruit were limited, if I wanted to keep up with my goal of 20g carbs per day.

    An Outdoor Summer Concert

    This week was absolutely fun. Thursday we went to a concert in Ogden Amphitheater, where The Shins would play. There were two downsides to this night: in the last minute we decided to take Marie with us changing the plans of leaving her with my husband’s sister in law. Big mistake!

    Marie, as a natural explorer didn’t stay still. She always wants to see the world and say “hi” to everybody passing by. The moment she finished eating all of the snacks that I brought to the show were gone, she started to “remember” that she was tired and needed to sleep. We managed to distract her a little, so we could watch the opening band play.

    The second downside was the fact that every band thinks it’s okay to make their fans to wait for them to start playing. The concert was scheduled to start at 5pm, but didn’t make an appearance until 7:30pm. The Shins came out around 8pm and by  that time we were all too tired to stay until the end and so we left early.

    It may appear that our day sucked but, we really had lots of fun. Before going to the  Amphitheater, we decided to find a place to eat. The short walk through cute downtown of Ogden, took us to an amazing discovery.

    Everybody knows that I am very skeptical of eating in restaurants that I’m not familiar with, however this one was a very great surprise. It’ s called Warren’s Craft Burger. I am not a big fan of going out to eat hamburgers in a restaurant but, I confess it was good, very good! I got the Mello Portobello and it was so yummy! Being Brazilian, I am very picky when it comes to food, especially in regards to seasoning which is an essential part of the cooking process to create tasteful dishes.     A Stroller Friendly Hiking Trail In Utah Every Parent Must Go With Kids

    Weekends are always bright and fun for us. The weekends are the best time to spend together, and enjoy what Utah has to offer, outdoor activities. After two years stuck at home, I am ready to finally go out and explore this beautiful world.

    In 2015, I gave birth to a beautiful little princess after a high risk pregnancy, which forced me to stay in bed most of the time. In 2016 I was taking care of a newborn, and it  was impossible to do certain activities. Baby Marie is almost two now and things are getting easier. There are still some activities or events we can’t do or go to but, at the end we were blessed with a little girl  that is full of energy, loves to go out and have fun.

    Our goal is to expose Marie to nature as much as we can and make her see the beauty of this world that God made for us. Hopefully, she will stay this way as she grows, always loving and enjoy being outside instead of playing video games, or on the internet.

    Saturday is always the most anticipated and exciting day of the week. On the weekends we feel that our week just got started as we have time for each other. We are always looking for something fun and enjoyable to do. Of course, this becomes easier in the summer, as the rigorous winter of Utah doesn’t give us many activities that can be done with a baby.
